I was asked by CafeMom to help in their Hidden Valley Italians bottled dressing influencer program. To create a meal using the Hidden Valley dressing. I did not want to follow a recipe of anything already used but get creative in the kitchen and create something new so this is fun to be a part of.
This is how I create my Italian Veggie & Chicken Love Rice Bake
What I used was a 12 X 8 pan. This is the recipe I made for that size pan. You can alter for whatever size you need.
You will need 2 diced chicken breast or leave out the chicken if you do not eat meat.
2 cups of instant rice
½ cup of copped bell pepper
¼ cup of diced red onion
½ cup of diced fresh spinach
¼ cup diced tomato
1 1/4 cup of chicken broth
1/4 teaspoon of garlic powder
¼ cup of Hidden Valley Farmhouse Originals Italian with Herbs
1 block of grated Mozzarella cheese
First you pour your rice into the pan. Next you put your chicken all around. Next your veggies all scattered all around. Next your garlic powder. Next pour your broth all over to coat the rice & veggies well. Lastly, pour all around your dish your Hidden Valley Farmhouse Originals Italian with Herbs. Cover with foil. Bake at 370 for 40 mins. The last 5 mins pull the dish out of the oven to layer on top your mozzarella cheese. Bake last five minutes.
This dish was truly easy and truly amazing. My family loved this! I bet yours will too!
