I love learning from other people, great tips of all kinds. I know this classy lady blogger who is just awesome. I wanted to share her video with you today. I seriously have never tired marinated chicken at home before. So when my good blogging friend Antoinette Blake over at dedivahdeals made this video in her continuing Brunch With Blake series I just had to try my hand at it too at some point. So this week I did it. She uses chicken thighs, which is much cheaper. But I like skinless chicken breast when I can afford it, so I thought let's do the same thing she did in the video but with a different cut of meat to see how it turns out.
So without further adieu let me introduce Antoinette & she will show you how to do this tasty meal. She can show you much better than I can. Then I will comment below how mine turned out.
She uses Washington chicken breading mix in the video after the marinate( you don't have to do this step but it is good) and I so wanted to try it but I searched all over Raleigh NC and did not find it. If any of you know where to buy in Raleigh please let me know!
Instead I used some seasoned bread crumbs you can buy in the flour ale at the market. I thought her idea of poking holes in the chicken and letting it sit in a large bag for hours to marinate was genius! And guess what? It worked! Why was I so afraid to try my hand at marinating before now?
I also did up some potatoes in foil like she did to go with it. I baked the chicken and potatoes in the oven as she suggested for 90 mins at 350 at the same time. WOW. It all turned out so good! I have never had great potato baked in the oven I always seem to do something wrong but I did exactly what she did and it turned out fantastic!
I just love my blogging sisters in the blogging community and I love to learn from them awesome things like cooking skills & such! Antoinette is one of my most favorite bloggers. I always learn something from her all the time. She is also awesome in showing support in the community. She doesn't just make you feel like a number at her blog but as a valued person. She is not one of the bloggers who never visit you back. She really interacts with her followers and I like that about her. She is so sweet & down to earth.
