I want to introduce to you a new soup I created with Parmigiano Reggiano. I call it Italian Vegetable Parmesan Bisque or Italian Veggie Parm for short. I created Spinach parmesan crisps to compliment it. I made this soup recipe for one for when I am eating alone. It is so very simple and easy. You do not see many soup recipes tailored for just one. However, this recipe can be doubled for more servings to make a fantastic soup to freeze for future meals. So why not make ahead or freeze for fast meal or give a delicious homemade soup as a gift to a sick friend this winter. Would make a great gift for the holidays or to serve at parties when you host and entertain.
Soup is perfect for these cold Fall and Winter months. It is my favorite meal to have during this season.
To make this bisque and the crisps you will need a blender of any type. I love my little bullet when making soup for one. You can use a large blender for a family size pot.
Parmigiano Reggiano Cheese is known as the KING OF CHEESE. They have made their cheese the same way in Italy for 900 years. This is an amazing legacy. Amazing authentic parma cheese with the best taste I promise you have ever had. I highly recommend this cheese for the recipe to taste just perfect! No other will have a rich history of amazing quality.
Next, blend your soup to a creamy texture. Bring to a boil then turn down to medium low and let simmer for about 20-30 mins. Stir often.
To go with the soup these low carb spinach parmesan crisps are a great substitute to crackers. Super loaded with nutrients.
